IPAs were first created by the English in the 1800s as pale ales designed to endure the long journey to India. By leaving fermentable material in the barrel, the beer continued fermenting during the voyage, while extra hops were added for their antibacterial properties.
The style saw a major revival during the American craft beer revolution of the early 1990s, resulting in beers that were far more full-flavored and bitter than their English counterparts.
Today, modern IPAs are less bitter and more juicy, with hops added post-fermentation to enhance flavor and aroma.
