Much like our Berliner Landbier  we use decoction brewing to make our Pilsner super smooth with a bitterness-balancing malt character. Decoction brewing involves removing a portion of the mash, boiling it, and then returning it to the main mash. This raises the overall temperature in stages, helping extract more sugars and enhance malt flavors.
